Stuffed potatoes with grilled halloumi cheese

Ingredients

Servings: 4
  • 4 large baked potatoes (approx. 250 g each)
  • 30 g Parmesan cheese
  • 1 basil bunch
  • 3 TABLESPOONS Whipped cream
  • 25 g soft butter
  • 1 TABLESPOON Mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 200 g Halloumi grilled cheese
  • 7-10 Tbsp Aluminium foil

Directions

    Wash the potatoes thoroughly, grate them dry, wrap them in aluminium foil and cook them in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C) for approx. 50 minutes. Remove potatoes from foil and continue cooking for 10-15 minutes. Remove potatoes and let them cool down.

    Grate parmesan. Wash the basil, dab dry, pluck the leaves from the stalks and, except for something to garnish, cut into strips. Cut the potatoes in half and spoon out the inside with a spoon, except for a narrow edge on the skin. Mix the potato mixture, cream, butter, mustard, basil strips and parmesan. Season to taste with salt and pepper. Fill the mixture into the potato half.

    Cut the cheese into slices and cover the potatoes with it and press it on a little. Grill the potatoes on the hot grill for 5-10 minutes
