Stuffed pork fillet rolls in tomato sauce

Ingredients

  • 1 Pork tenderloin (approx. 350 g)
  • 6 discs Bacon
  • 12 semi-soft plums
  • 100 g Spring onions
  • 2-3 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 package (370 g) chunky tomato sauce with herbs
  • 1 (3 l) Freezer bag

Directions

    Wash the pork file, dab dry and cut into 12 slices. Cut open freezer bag, place slices in between and beat flat. Halve bacon slices. Place a plum on each slice of meat, roll it up and wrap half a slice of bacon around it.

    Clean and wash spring onions and cut into fine slices. Heat the oil in a large pan and fry the rolls for 5-6 minutes, turning them over. Season with salt and pepper and remove from the pan.

    Sauté the spring onions in hot frying fat. Add tomato sauce and bring to the boil while stirring. Season to taste with salt and pepper. Arrange pork rolls with the tomato sauce on plates. Serve with baguette.
