Ingredients

  • 225 ml Milk
  • 100 g dried apricots
  • 25 g Pistachio kernels
  • 1/2 package (500 g) Baking mix for Sunday mares
  • 2 packages Dry yeast
  • 2 Eggs (size M)
  • 125 g Flour
  • 100 g soft butter or margarine
  • 50 g Sugar
  • 1 package Vanillin sugar
  • 1 TABLESPOON Cocoa powder
  • 1 TABLESPOON Icing sugar
  • 7-10 Tbsp Flour

Directions

    Warm the milk lukewarm. Dice the apricots. Chop the pistachios coarsely, except for 8. Mix baking mixture and yeast in a bowl. Add 1 egg and milk. Mix briefly with the dough hooks of the hand mixer on a low setting. Then knead for approx. 3 minutes at highest speed to a smooth dough.

    At the end of the kneading time add the apricots and pistachios. Cover the dough and let it rise in a warm place for about 15 minutes. In the meantime, for the crumbles, knead flour, fat, sugar and vanillin sugar with the dough hooks of the hand mixer into crumbles. Knead the cocoa under half of the crumbles. Form 3/4 of the dough into a strand, divide into 8 pieces. Roll out oval on a floured work surface. Place on two baking trays lined with baking paper. For the head, roll out remaining dough and cut out round heads (3 cm Ø). Shape them slightly oblong and place them on the body. Shape the remaining dough to ears, feet and tails. Place on the head and body and press on. Whisk 1 egg. Brush lambs with it. Place one pistachio aside as an eye on each lamb head and press on.

Put the other tray in a cool place. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 15-20 minutes. In the meantime, put the second tray in a warm place for about 15 minutes. Bake at the same temperature and time. Let it cool down. Dust white lambs with icing sugar

    Leave a tray in a warm place for about 15 minutes. Put the other tray in a cool place. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 15-20 minutes. In the meantime, put the second tray in a warm place for about 15 minutes. Bake at the same temperature and time. Let it cool down. Dust white lambs with icing sugar
