Wash the strawberries, put 4 aside for decoration. Clean the remaining strawberries, drain well and cut in half. For the zabaglione, mix egg yolk, sugar, starch and wine in a metal bowl.
Whisk on a warm water bath (water must not boil!) for approx. 12 minutes with the whisk of the hand mixer until thick and creamy white. Spread the zabaglione evenly over the strawberries, decorate with strawberries and lemon balm set aside.
