Steamed asparagus with potato vinaigrette

Ingredients

  • 250 g Potatoes
  • 7-10 Tbsp Salt
  • 2 TABLESPOONS Sugar
  • 1/2 untreated lemon
  • 1 red onion
  • 8 Stem(s) Parsley
  • 1 kg green asparagus
  • 4 TABLESPOONS Wine vinegar
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Honey
  • 4 TABLESPOONS Sunflower oil

Directions

    Peel and wash the potatoes, halve them according to size. In a wide pot or roaster with steaming insert, pour water up to the bottom of the insert. Season to taste with salt and sugar. Cut lemon into slices, add to the stock and bring to the boil. Put the potatoes in the steamer insert and cook in the closed pot over the lightly simmering stock in the steam for about 30 minutes.

    Peel onion and cut into fine cubes. Wash parsley, shake dry and, except for something to garnish, pluck leaves from the stems and chop. Wash the asparagus and cut off the woody ends. After 20 minutes cooking time add asparagus to the potatoes. Remove the finished potatoes from the steamer and mash them with a fork. For the vinaigrette, whisk 100 ml stock, vinegar, salt, pepper and honey. Add oil drop by drop. Add the onion, potatoes and chopped parsley to the vinaigrette, except for some garnish. Arrange asparagus and sauce on plates.

    Remove the finished potatoes from the steamer and mash them with a fork. For the vinaigrette, whisk 100 ml stock, vinegar, salt, pepper and honey. Add oil drop by drop. Add the onion, potatoes and chopped parsley to the vinaigrette, except for some garnish. Arrange asparagus and sauce on plates. Sprinkle with chopped parsley
