Ingredients

  • 50 g Cornstarch
  • 50 g Flour
  • 1 pinch Salt
  • 1 TEASPOON Sugar
  • 1 package Vanillin sugar
  • 2 Eggs (size M)
  • 1/8 l Milk
  • 1 l oil or 750 g white vegetable fat for frying
  • 100 Icing sugar

Directions

    Place the starch, flour, salt, sugar, vanilla sugar and eggs in a mixing bowl, add the milk and mix with the whisks of the hand mixer to a smooth dough. Leave the dough to swell for 15-20 minutes.

    Put the oil or the white cooking fat in a deep fryer and heat it to about 180°C. (You can of course also heat the fat in a higher pot. To test the correct temperature, hold a wooden spoon handle in the fat.

    As soon as bubbles rise on it, you can start baking). Screw the wheel or star shape onto the holder and dip the appliance in the hot fat so that it heats up well. Dip the wheel into the dough twice in a row so that the top edge is not covered by the dough.

    (Otherwise the pastry will not come off the mould.) Now dip the wheel into hot fat until the dough comes off the iron. Make the next wheels in the same way. Turn the floating biscuits with a piece of wood or the mould so that they are browned evenly on both sides.

    Drain on kitchen paper, then dust with icing sugar. Serve immediately if possible. Makes about 24 pieces.
