Spinach salad with apple

Ingredients

Servings: 4
  • 500 g fine spinach
  • 150 g shelled almonds
  • 1–2 Garlic cloves
  • 4-6 Tbsp Lime juice
  • 2 TABLESPOONS Honey
  • 1/2 TEASPOON ground cumin and coriander
  • 1/4 TEASPOON Salt
  • 2 Apples
  • 4-6 Tbsp Olive oil

Directions

    Clean the spinach, wash thoroughly and drain. Roast the almonds in a pan without oil, remove them, let them cool down and cut or chop them into fine slices. For the sauce, peel the garlic and press it through a garlic press.

    Mix lime juice, garlic and honey. Season with cumin, coriander and salt. Wash and quarter apples, remove core. Cut flesh into very fine slices and turn in the sauce.

    Heat olive oil until it almost smokes. Drizzle over the spinach, turning the spinach constantly. Add apple sauce and mix. Sprinkle with almonds.
