Spareribs with rice and bean salad

Ingredients

  • 1 kg Spareribs
  • 3 Onions
  • 1 Carrot
  • 6-8 black peppercorns
  • 7-10 Tbsp Salt
  • 1-2 Bay leaves
  • 150 g Long grain rice
  • 1 can(s) (425 ml) Italian broad beans
  • 1 can(s) (425 ml) kidney beans
  • 1 pickled cucumber
  • 250 g Tomatoes
  • 1/2 bunch Parsley
  • 100 ml white balsamic vinegar
  • 7-10 Tbsp black pepper
  • 7-10 Tbsp Sugar
  • 3 TABLESPOONS Oil
  • 1 red chilli pepper
  • 1 Garlic clove
  • 75 g liquid honey
  • 3 TABLESPOONS Tomato ketchup
  • 7-10 Tbsp Parsley and chillies

Directions

    Washing meat. Peel 2 onions. Peel the carrot. Put 3 litres of water, peppercorns, onions, salt, carrots, bay leaf and spare ribs in a large pot and bring to the boil. Simmer at medium heat for about 30 minutes. In the meantime, add rice to 300 ml boiling salted water and simmer covered at low heat for about 20 minutes.

    Pour the beans and kidney beans into a sieve and rinse with cold water. Drain well. Clean and wash the cucumber and slice it thinly. Wash, clean and slice the tomatoes. Wash parsley, dab dry and chop finely. Peel 1 onion and chop finely. Mix vinegar, parsley, diced onion, salt, pepper and sugar. Fold in the oil. Pour rice into a sieve, quench and drain well. Leave to cool a little. In the meantime, pour the spare ribs into a sieve and drain well.
