Peel and chop the onion. Fry onion and minced meat in hot oil. Season with salt and pepper. Add soup vegetables and cook for about 3 minutes. Coarsely chop the tomatoes in the tin and add to the minced meat.
Let it boil down for about 15 minutes while stirring. Stir in tomato paste. Cook pasta in boiling salted water for about 10 minutes and drain. Wash parsley, dab dry and chop. Add to the sauce, season again and serve with the noodles.
