Spaghetti with spinach & parmesan

Ingredients

Servings: 2
  • 40 g spaghetti, salt
  • 150 g leaf spinach
  • 1 small onion
  • 1 small clove of garlic
  • 5-6 cherry- or small tomatoes
  • 1/2 tsp (3 g) Olive oil
  • 2-3 TABLESPOONS Tomato juice
  • 7-10 Tbsp black pepper

Directions

    Cook the pasta in plenty of boiling salted water for 8-10 minutes until al dente

    Clean, wash and drain the spinach. Peel onion and garlic, dice finely. Wash and halve the tomatoes

    Heat the oil in a coated pan. Sauté the onion and garlic in it. Add the spinach and let it collapse. Steam the tomatoes briefly. Add tomato juice and bring to the boil. Season to taste

    Drain the pasta and fold into the vegetables. Slice or grate Parmesan cheese over it
