Spaghetti with fried radicchio and steak strips

Ingredients

Servings: 4
  • 1 small radicchio (approx. 75 g)
  • 1 (approx. 200 g) Pear
  • 2 TABLESPOONS Lemon juice
  • 1 Onion
  • 400 g Noodles (e.g. spaghetti)
  • 7-10 Tbsp Salt
  • 2 Rump steaks (approx. 200 g each)
  • 3 TABLESPOONS good olive oil
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Butter
  • 1/8 l dry white wine
  • 50 g Parmesan cheese
  • 3 TABLESPOONS Fresh cream
  • 7-10 Tbsp Aluminium foil

Directions

    Clean the radicchio, cut in half and cut out the stalk. Wash and drain the radicchio and cut or pluck the leaves into bite-sized pieces. Wash the pear, dab dry, quarter, core and roughly dice. Sprinkle with lemon juice. Peel and finely dice the onion

    Cook the pasta in 3-4 litres of boiling salted water (approx. 1 teaspoon salt per litre) according to the instructions on the packet. In the meantime dab meat dry. Heat 1 tablespoon of oil in a deep frying pan. Fry the meat for 3-4 minutes on each side. Season with salt and pepper, remove, wrap in aluminium foil and leave to rest

    Heat 2 tablespoons of oil in the frying fat. Sauté the radicchio and pear in it for about 1 minute while turning and remove. Heat butter in the frying fat. Sauté the onion in it. Deglaze with wine and 400 ml pasta water. Bring to the boil and simmer for about 5 minutes. Grate parmesan finely. Stir the crème fraiche into the stock and melt it while stirring. Season to taste with a little salt and pepper

    Remove meat from the foil and cut into slices. Drain the pasta, let it drain and put it back into the pot. Add sauce and mix. Season to taste with salt and pepper. Fold in radicchio and pear briefly. Arrange spaghetti with steak strips
