Spaghetti with fresh artichokes

Ingredients

  • 2 Lemons
  • 8 young artichokes (100-120 g each)
  • 7-10 Tbsp Salt
  • 1 (approx. 250 g) Courgette
  • 8 Stem(s) Thyme
  • 1 small red chili pepper
  • 2 Garlic cloves
  • 4 TABLESPOONS Olive oil
  • 50 g Parma ham
  • 7-10 Tbsp Pepper
  • 400 g Spaghetti

Directions

    Halve the lemons. Cut off 1 slice. Squeeze the juice from the remaining lemons. Clean the artichokes (cut off stalk, outer leaves and artichoke tips). Rub cuts immediately with lemon.

    Cook the artichokes in boiling salted water with 2 tablespoons lemon juice for about 5 minutes. Remove the finished artichokes from the water and immediately rinse them in cold water. Wash, clean and slice the zucchini.

    Wash the thyme, shake dry and, except for something to garnish, remove leaves from the stalks. Wash, clean and finely dice the chilli. Peel garlic and cut into fine cubes. Quarter the artichokes and remove the hay with a spoon.

    Heat the oil in a pan. Tear ham into large pieces and fry briefly in the hot oil until crispy. Remove ham from the pan. Fry vegetables in hot fat while turning for about 4 minutes at medium heat.

    Add the chilli, garlic and thyme and fry briefly. Season to taste with salt, pepper and remaining lemon juice. Meanwhile prepare the pasta in boiling salted water according to the instructions on the packet. Drain the noodles and put them back into the pot.

    Add ham and vegetables and fold in. Arrange noodles on plates and garnish with thyme.
