Sour cucumber with salmon

Ingredients

Servings: 4
  • 1.2 kg Braised cucumbers or cucumbers
  • 1 medium onion
  • 2 tablespoons (30 g) butter/margarine
  • 7-10 Tbsp salt, white pepper
  • 1/2 TEASPOON Vegetable broth (instant)
  • 400 g Salmon fillet
  • 7-10 Tbsp juice of 1/2 lemon
  • 1/2 bunch Dill
  • 125-150 g Sour cream or crème fraîche
  • 1-2 TABLESPOONS sauce thickener

Directions

    Cucumbers peel, wash, lengthwise halve, core and cut into pieces. Peel and chop the onion. Fry in 1 tbsp. hot fat. Add cucumbers/and fry vigorously while turning. Season and deglaze with 1/8 l water. Bring to the boil, stir in the stock and braise covered for 15-20 minutes

    Wash the salmon, pat dry and cut into cubes. Sprinkle with lemon juice. Heat 1 tablespoon of fat. Fry the salmon in it all around for about 5 minutes, season

    Wash the dill and cut it finely. Add the sour cream to the cucumbers. Bring to the boil briefly and thicken slightly if necessary. Add salmon. Serve everything. Rice tastes good with it
