Sillisalaatti (Finnish herring salad)

Ingredients

Servings: 4
  • 250 g waxy potatoes
  • 250 g beetroot
  • 7-10 Tbsp Salt
  • 2 medium-sized carrots
  • 6 Matie's fillets
  • 1 gherkin
  • 1 big apple
  • 1 small onion
  • 4 TABLESPOONS Wine vinegar
  • 150 g Fresh cream
  • 7-10 Tbsp Pepper
  • 1 Egg
  • 7-10 Tbsp Parsley

Directions

    Wash the potatoes and cook in boiling water for 25 minutes. Wash and peel beetroot, cover and cook in a little salted water for 15 minutes. Peel and wash carrots, cut them into thin slices and cook in a little water for 10 minutes.

    Cut the matie into pieces. Cut the gherkin into thin slices. Peel apple, cut into eighths, cut out core. Cut apple into small slices. Peel onion and cut into fine rings.

    Drain potatoes, quench, peel, let cool and cut into slices. Let the beetroot cool down and cut into sticks. Pour two tablespoons of vinegar over them. Allow to soak through a little. Mix crème fraîche with the rest of the vinegar.

    Season to taste with salt and pepper. Mix all ingredients and let it stand for 30 minutes. Boil the egg hard for ten minutes, quench, peel and cut into eight pieces. Pour salad into a bowl. Garnish with egg and parsley.
