Sesame Crunchy Schnitzel with Cucumber Caipirinha

Ingredients

Servings: 6
  • 3 Cucumbers
  • 7-10 Tbsp Salt
  • 3 Organic limes (yellow-green)
  • 4-6 Tbsp demerara sugar
  • 1 collar Radishes
  • 1 collar Chives
  • 500 g Cream quark (40 %)
  • 100 g Whipped cream
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Juice from 1⁄2 Lemon
  • 150 g Japanese breadcrumbs (you can get them in the Asian shop; substitute breadcrumbs)
  • 6 TABLESPOONS white and black sesame
  • 8 thin turkey escalopes (approx. 150 g each)
  • 7-10 Tbsp Chilli salt and pepper mixture
  • 5-6 Tbsp Flour
  • 2 Eggs (size M)
  • 3-4 Tbsp Oil

Directions

    Peel and slice the cucumbers. Mix with a good 1 teaspoon salt. Leave to stand for about 20 minutes. Then drain the cucumber water (otherwise the salad will be watered down). Wash the limes and grate them dry.

    Grate the zest of 1 lime and cut 1 lime into thin slices. Squeeze the juice from the remaining 2 limes. Mix the lime zest and juice with the cucumber salad. Season to taste with sugar and salt.

    Clean and wash the radishes and cut them into thin sticks. Wash chives, shake dry and cut into fine rolls. Stir curd and cream until smooth. Fold in radishes and chives.

    Season to taste with salt, pepper and lemon juice. Mix breadcrumbs and sesame seeds. Wash the schnitzel, dab dry and tap flatter. Then cut in half. Season with chilli salt and pepper mixture. Turn escalopes one after the other first in flour, then in whisked eggs and finally in sesame breadcrumbs.

    Press on the breadcrumb coating. Fry escalopes in portions in hot oil on each side for 2-3 minutes. Drain well on kitchen paper. The schnitzels taste hot or cold. Arrange cucumber salad in caipirinha glasses.

    Cut a small slice into each of the lime slices and stick it to the edges of the glass. Serve with the slices and the radish cream.
