Semolina pudding with colourful berries

Ingredients

  • 1 l Cherry nectar
  • 2 packages Vanillin sugar
  • 125 g Sugar
  • 1 package Pudding powder "Vanilla Flavor"
  • 1 (750 g) Bag deep-frozen multicoloured berry basket
  • 3 Eggs (size M)
  • 1,5 l Milk
  • 125 g Whipped cream
  • 100 g Durum wheat semolina
  • 7-10 Tbsp Lemon balm
  • 7-10 Tbsp Cling film

Directions

    Stir 50 ml cherry nectar, 1 sachet vanilla sugar, 50 g sugar and pudding powder until smooth with a whisk. Boil up the rest of the cherry nectar, stir in the pudding powder. Bring to the boil while stirring and simmer for about 1 minute.

    Mix in frozen fruit and cover directly with cling film to prevent skin formation. Allow to cool slightly. In the meantime, separate the eggs, whisk the egg yolks with a fork. Keep egg yolk and egg white separately in a cool place.

    Bring milk and cream to the boil in a large pot. Add the rest of the sugar and vanillin sugar. Stir in the semolina. Bring to the boil while stirring constantly. Leave to swell over low heat for about 2 minutes.

    In the meantime, whisk the egg white with the whisk of the hand mixer until stiff. Remove semolina from the stove, stir in egg yolk and fold in egg white in portions. Pour into a dessert bowl and let it cool down.

    Serve the semolina with some coloured berries. Decorate with lemon balm if desired. Serve the rest of the berries separately.
