Semolina pudding with cherry compote

Ingredients

  • 1 glass (720 ml) Cherries (capacity: 680 g; drained net weight: 370 g)
  • 1 TABLESPOON Pudding powder "Vanilla Flavor"
  • 3 TABLESPOONS Sugar
  • 1 pinch Cinnamon
  • 1 TABLESPOON Lemon juice
  • 850 ml Milk
  • 1 pinch Salt
  • 100 g Common wheat semolina
  • 2 Eggs (size M)
  • 20 g Amaretti (about 12 pieces)
  • 2 TABLESPOONS Butter
  • 7-10 Tbsp Amaretti and mint

Directions

    Drain the cherries, collect the juice. Stir 5 tablespoons of juice and pudding powder until smooth. Boil up the rest of the juice. Add 1 tablespoon of sugar, cinnamon and lemon juice. Add the pudding powder while stirring and bring to the boil.

    Remove from the heat, fold in the cherries. Bring 750 ml milk, 2 tablespoons sugar and salt to the boil. Add semolina and let it swell for about 3 minutes while stirring. Separate the eggs. Whisk egg yolk and 100 ml milk. Stir into the semolina porridge, do not let it boil anymore. Beat egg white until stiff, fold in. Crumble Amaretti. Melt butter, add crumbs. Serve the semolina and cherry compote in portions.
