Semolina foam with cherries & Amarettini

Ingredients

Servings: 4
  • 1 glass (720 ml) Cherries
  • 2-3 heaped tablespoons Cornstarch
  • 3 coated tablespoons of sugar
  • 7-10 Tbsp Cinnamon
  • 1 TABLESPOON Lemon juice
  • 400 ml Milk
  • 30 g Common wheat semolina
  • 2 eggs, salt
  • 20 Amarettini biscuits
  • 1-2 TABLESPOONS Butter
  • 7-10 Tbsp Mint

Directions

    Drain the cherries and collect the juice. Stir 5 tablespoons of juice and starch until smooth. Boil up the rest of the juice. Add 1 tablespoon sugar, some cinnamon and lemon juice. Stir in the starch, bring to the boil and simmer for about 3 minutes. Fold in cherries. Let cool off

    Boil up the milk. Stir in semolina and 2 tablespoons of sugar, bring to the boil once and let it swell for about 5 minutes

    In the meantime, separate the eggs. Beat the egg white and 1 pinch of salt until stiff. Take the pot off the stove. Stir the egg yolks one after the other into the semolina. Fold in the beaten egg white. Let cool down if necessary.

    Crumble half of Amarettini. Melt the butter and toss the crumbs in it. Arrange semolina foam and cherries in portions. Spread the Amarettini butter on top. Decorate with remaining Amarettini and mint
