Peel and chop the onion. Mix vinegar, salt, pepper and sugar. Fold in the oil. Wash or peel and chop the cucumber. Mix with onion and marinade. Wash and drain the salad
Wash the chives, shake dry and cut into fine rolls. Whisk eggs, milk, pepper and a little salt. Stir in half the chives
Cut the bacon into strips. Leave it crispy in the pan. Add the eggs, let them fry at low heat, pushing them together from time to time with a spatula
Arrange the lettuce on plates. Arrange scrambled eggs and cucumber salad on top. Sprinkle with remaining chives, garnish with parsley if necessary. Serve with farmhouse or brown bread
Instead of streaky bacon you can also use bacon (breakfast bacon)
