Schnitzel Strammer Max with fried potatoes

Ingredients

Servings: 4
  • 800 g Potatoes
  • 100 g Cured ham
  • 1 Onion
  • 4 TABLESPOONS clarified butter
  • 4 Turkey escalope (approx. 100 g each)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 Eggs (size M)
  • 1/4 collar Chives
  • 7-10 Tbsp Grease

Directions

    Wash the potatoes and cook in boiling water for about 20 minutes. Dice ham. Peel and chop the onion

    Heat 1 tablespoon of clarified butter in a frying pan. Brown the ham for about 5 minutes. After about 2 minutes add onion. Wash the meat and dab dry. Remove ham from the pan. Heat 1 tbsp. clarified butter in a frying pan. Fry the meat for approx. 5 minutes while turning. Season with salt and pepper

    Meanwhile drain the potatoes, rinse, peel and slice them. Heat 2 tablespoons of clarified butter in a pan. Fry the potatoes for about 15 minutes, turning occasionally. Fry with salt and pepper

    Remove the schnitzel from the pan and keep warm. Wipe out the pan, spread with fat, beat the eggs into the pan and fry for about 4 minutes. Season with salt and pepper. Wash chives, shake dry and cut into small rolls. Arrange fried eggs and ham on the escalopes. Add fried potatoes. Sprinkle everything with chives
