Ingredients

  • 50 g Diced ham
  • 1/2 bunch Parsley
  • 1 (200 g) small red pepper
  • 1 spring onion
  • 1 package (150 g) Fresh goat cheese
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 package (270 g) fresh puff pastry for strudel and small pastries (rolled out on baking paper; 42 x 24 cm; refrigerated shelf)
  • 1 Egg yolk (size M)
  • 1 (approx. 100 g) small head radicchio
  • 150 g Lamb's lettuce
  • 100 g Salad Mayonnaise
  • 75 Whole milk yoghurt
  • 2 TABLESPOONS Milk
  • 1-2 TEASPOONS Worcester sauce
  • 3 TABLESPOONS Tomato ketchup
  • baking paper

Directions

    Leave the diced ham in a pan without fat until crispy, take it out. Wash parsley, dab dry, pluck leaves from the stalks and chop finely. Clean, wash and chop the bell peppers into small cubes. Leek onions clean, wash and cut into fine rings. Mix ham, parsley, paprika and spring onion with goat cheese, season with salt and pepper

    Cut the puff pastry into 8 squares (9 x 9 cm) (use the rest for other purposes if necessary). Spread 1-2 teaspoons of goat's cream cheese mixture in the middle of each square. Fold the squares into a triangle and press the edge firmly with a fork. Whisk the egg yolks with 3 tbsp. water and brush the dumplings with it. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 13-15 minutes until brown

    Wash lamb's lettuce and radicchio thoroughly. Pluck the radicchio into bite-sized pieces. Mix mayonnaise, yoghurt, milk, Worcester sauce and ketchup, season with salt and pepper. Take out dumplings and arrange on plates with salad. Drizzle salad with dressing
