Ingredients

  • 200 g blue grapes
  • 200 g green, seedless grapes
  • 1 collar Thyme
  • 1-2 red chillies
  • 3 TABLESPOONS White wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Sugar
  • 1 kg fresh sauerkraut (health food store)
  • 50 g aged Gouda cheese
  • 7-10 Tbsp Pepper
  • 150 g Parma ham

Directions

    Rinse the grapes in hot water. Cut the blue grapes in half and remove the seeds. Green grapes may be halved depending on their size. Wash thyme. Put something aside for garnishing. Pluck the remaining leaves from the stems.

    Cut the chillies open lengthwise, remove the seeds, rinse the pods. Heat vinegar, thyme, salt, chilli and sugar in a pot while stirring. Fold in the sauerkraut and grapes, remove from heat, set aside, cover and let stand for about 10 minutes.

    In the meantime, slice the Gouda into thin slices. Season the salad with salt, pepper and sugar. Put it on a plate. Arrange ham and cheese on the salad. Garnish with thyme.
