Salmon with mango salsa

Ingredients

Servings: 4
  • 700 g Salmon fillet without skin
  • 3 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Juice of 2 limes
  • 1 Mango
  • 1/2 bunch Spring onions
  • 150 g cherry tomatoes
  • 1 Avocado
  • 7-10 Tbsp Pepper

Directions

    Wash the fish and pat dry thoroughly. Heat the oil in a large pan, fry the fish in it over medium heat for 8-10 minutes while turning, season with salt, pepper and the juice of 1 lime.

    Peel the mango and cut the flesh from the stone. Wash and clean the spring onions and cut into fine rolls. Wash and quarter the tomatoes. Cut avocado in half, remove core, peel flesh from skin and cut into small cubes. Mix all prepared ingredients, season with salt, pepper and lime juice.

    Arrange the fish, add half of the salsa and the rest of the salsa. Sprinkle with coarse pepper. Bread tastes good with it.
