Salmon with caper butter

Ingredients

  • 800 g Salmon fillet
  • 250 g fine spinach
  • 750 g Potatoes
  • 2 TABLESPOONS Salt Capers
  • 1 Stiel glatte Petersilie
  • 2 Shallots
  • 50 g Butter
  • 2 Garlic tubers
  • 1 Lime
  • 7-10 Tbsp Pepper
  • parchment or baking paper

Directions

    Wash the salmon, dab dry and divide into 4 pieces. Clean, wash and drain the spinach well. Peel and wash the potatoes and slice them finely. Chop capers. Wash parsley and cut into fine strips.

    Peel and finely dice shallots. Mix butter, capers, parsley and shallots. Halve the garlic bulbs, cut the lime into slices. Line 4 large pieces of parchment or baking paper. First cover half of each with the potato slices, season lightly with salt and pepper. Spread spinach and salmon on top. Put butter in flakes on the salmon. Cover with slices of lime. Place 1/2 garlic bulb on each edge.

Fold the second half of the paper over and fold it into a crescent shape. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 20 minutes.
