Salmon tartar with princess beans

Ingredients

  • 1 Shallot
  • 7-10 Tbsp a few stalks of chives
  • 1 Lime
  • 400 g fresh salmon fillet
  • 200 g Princess beans
  • 7-10 Tbsp Salt
  • 25 g Sesame
  • 2 TABLESPOONS Sesame Oil
  • 7-10 Tbsp white pepper
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Lime wedges, dill and dill flowers

Directions

    Peel and finely dice the shallot. Wash the chives, dab dry and cut into small rolls. Wash the lime hot, dab dry and grate the peel. Halve the lime and squeeze. Rinse salmon fillet cold and dab dry. Bone and cut into small cubes with a sharp knife

    Mix the fish, shallot, chives, lime juice and zest and leave to stand. Clean and wash the beans and cook in boiling salted water for 8-10 minutes. Drain and rinse with cold water

    Lightly roast sesame seeds in a pan without fat, remove. Heat the oil in the pan, toss the beans in it. Season with salt, pepper and a pinch of sugar. Arrange the beans and salmon tartar on plates, sprinkle with sesame seeds. Garnish with lime wedges, dill and dill blossoms as desired. Serve immediately
