  • 7-10 Tbsp For the salmon-fruit skewers
  • 2 TABLESPOONS Salad Mayonnaise
  • 1 TEASPOON Apricot Jam
  • 7-10 Tbsp Curry
  • 1-2 TEASPOONS Lemon juice
  • 7-10 Tbsp Salt
  • 1 Kiwi
  • 80 g Butter cheese (in pieces)
  • 4 discs (approx. 60 g) Smoked salmon
  • 8 blue grapes
  • 7-10 Tbsp Parsley
  • 4 wooden skewers
  • 7-10 Tbsp For the salmon fillet
  • 4 black olives
  • 1/4 red, yellow and green peppers
  • 2 Salmon fillets without skin (approx. 150 g each)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 1 TABLESPOON Oil
  • 2-3 Bay leaves
  • 7-10 Tbsp Rosemary
  • 2 TABLESPOONS dry white wine
  • 2 TABLESPOONS icy butter

Directions

    For the salmon-fruit skewers, mix mayonnaise, jam and curry. Season with lemon juice and salt. Peel the kiwi and cut into half slices. Cut cheese into 4 cubes. Cut salmon slices in half and roll up.

    Wash the grapes. Put salmon, kiwi, grapes and cheese on 4 skewers. Garnish with parsley as desired. Add dip. For the salmon filet, cut olives from the stone. Clean and wash the peppers.

    Finely dice the olives and peppers. Wash the fish, pat dry and season with salt and pepper. Heat the oil. Fry the salmon fillets on both sides for about 4 minutes. Remove and keep warm. Fry the bay leaf, rosemary needles and vegetables briefly in the frying fat.

    Douse with white wine. Stir in butter. Season to taste with salt and pepper. Arrange everything on a plate.
