Salad of melon balls with cranberries

Ingredients

  • 1 1/2 TSP. Mustard
  • 3 TABLESPOONS Cranberry juice
  • 1/2 TEASPOON Salt
  • 4 TABLESPOONS Olive oil
  • 100 g whole, dried cranberries
  • 1/2 (approx. 1800 g) Watermelon
  • 1 (approx. 900 g) Galia melon
  • 200 g Sheep's cheese
  • 50 g Walnuts
  • 2 packages (100 g each) Baby Spinach

Directions

    Mix mustard, cranberry juice and salt. Whip olive oil into it. Add cranberries and fold in.

    Form balls from the galia and watermelon with a ball cutter. Coarsely crumble the feta cheese. Roast the walnuts in a pan without fat and chop them coarsely. Wash the salad and spin dry.

    Mix all ingredients together and serve sprinkled with dressing. Roasted baguette tastes good with it.
