Salad mix with almond date marinade

Ingredients

Servings: 10
  • 50 g ground almonds (with skin)
  • 1 medium onion
  • 5–6 Dates without stone
  • 5 TABLESPOONS Fruit vinegar
  • 6-7 TABLESPOONS apple juice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 6 TABLESPOONS Oil
  • 300 g cherry tomatoes
  • 150 g Lamb's lettuce
  • 1 (approx. 300 g) large radicchio
  • 2 medium-sized chicory

Directions

    Roast the almonds in a pan and take them out. Peel and finely chop the onion. Chop dates finely. Whisk vinegar, apple juice, salt and pepper. Fold in the oil. Stir in almonds, dates and onions.

    Wash and quarter the tomatoes. Clean, wash and drain the lettuce and chicory well. Halve the chicory and cut the stalk into wedges. Cut chicory and radicchio into strips.

    Mix everything with the marinade. Baguette tastes good with it.
