Rocket Tomato Plate

Ingredients

  • 1-2 Garlic cloves
  • 4 TABLESPOONS Balsamic vinegar
  • 7-10 Tbsp or 4 tablespoons red wine vinegar
  • 7-10 Tbsp salt, pepper, sugar
  • 4-5 Tbsp Oil (e.g. olive oil)
  • 125-150 g rocket or 1 small romaine salad
  • 500 g Tomatoes
  • 1 Onion

Directions

    Peel garlic if necessary. Mix vinegar, salt, pepper and some sugar. Fold in the oil well. Chop the garlic finely and add to the marinade or press it in through the garlic press

    Clean, wash and drain the arugula. Cut rocket into strips. Clean, wash and, depending on size, quarter or roughly dice the tomatoes. Peel the onion and cut into coarse cubes or half rings

    Mix the prepared salad ingredients with the marinade and let everything stand for a while. Arrange on a large plate. Serve with baguette

    Arugula (rocket) can be used as a kitchen herb or as a salad. It tastes strong, slightly radish like. Since it wilts quickly, store it in a plastic bag in the vegetable compartment of the refrigerator with a little water until it is consumed!
