Peel oranges so that the white skin is completely removed. Remove the fillets between the parting skins. Squeeze juice out of the parting skins
Peel the garlic and press it through a garlic press. Mix orange juice, mustard, vinegar and honey. Season with salt and pepper. Add 3 tablespoons of oil drop by drop while stirring. Wash the meat, dab dry, cut into strips and marinate in the prepared sauce for about 1 hour.
Sort the salad, wash and spin dry. Put the meat in a sieve and let it drip off. Collect the marinade. Heat 1 tablespoon of oil in a pan. Add the meat and fry vigorously for approx. 3 minutes, turning. Deglaze with the marinade and season with salt and pepper. Mix salad and orange filets and serve. Add meat strips
