Clean the leek, wash it. Cut it into pieces of about 8 cm length. Peel the garlic and halve about 2/3 of the cloves lengthwise
Wash the meat and pat dry. Prick in close together with a sharp knife about 1 cm deep. Put halved garlic cloves into the incisions. Rub the meat with salt and pepper
Heat the oil in a frying pan (with a well-closing lid). Brown the meat all around, remove. Heat butter in the frying fat. Fry the leek and the remaining garlic cloves. Season with salt and pepper
Place the roast on the leek and sprinkle with oregano. Cover and braise in a preheated oven (electric cooker: 175 °C/circulating air: 150 °C/gas: level 2) for 1 1/2-2 hours. Season to taste the braising stock. Arrange everything, garnish with oregano. Serve with boiled potatoes or bread
