Rice pudding with fruit (diabetics)

Ingredients

Servings: 1
  • 1/8 l Milk
  • 1/2 Vanilla pod
  • 30 g Round grain rice
  • 1 piece(s) peel of 1 untreated lemon
  • 7-10 Tbsp Salt
  • 7-10 Tbsp a few squirts of sweetener
  • 90 g Apricots
  • 100 g washed, cleaned strawberries
  • 100 g Low-fat curd
  • 7-10 Tbsp Mint

Directions

    Fill milk with water to 200 ml and put it into a small pot. Cut the vanilla pod lengthwise and scrape out the pulp. Bring milk and vanilla pod to the boil. Add rice, lemon zest, vanilla pulp and 1 pinch of salt to the milk while stirring.

    Cover and allow to swell for approx. 30 minutes at low heat. Stir from time to time. Remove rice pudding from the stove. Remove vanilla pod and lemon peel. Season rice with sweetener. Drain the apricots and cut into slices.

    Dab strawberries dry and cut into slices. Stir the quark into the rice pudding. Carefully fold in the fruit. Season to taste again with sweetener and decorate with mint if necessary.
