Rice pudding with apple and pear compote

Ingredients

Servings: 4
  • 2 Apples (approx. 300 g)
  • 2 (approx. 300 g) Pears
  • 1 TABLESPOON Sugar
  • 2 TABLESPOONS Lemon juice
  • 1 Cinnamon stick
  • 500 g low-fat milk (1,5 % fat)
  • 1 pinch Salt
  • 7-10 Tbsp S
  • 125 g Rice Pudding
  • 150 g low-fat yoghurt (1,5 % fat)
  • 7-10 Tbsp Lemon balm

Directions

    Wash apples and pears, (leave 1/2 pear unpeeled) peel, halve, cut out the core and dice the flesh. Cut 1/2 pear into columns. Put 250 ml water, sugar, lemon juice, cinnamon stick and diced fruit into a pot, bring to the boil, cover and simmer for about 15 minutes.

    Then add the pear wedges and simmer for another 3-4 minutes. Pour into a bowl. Meanwhile, bring milk, salt and lemon zest to the boil in a saucepan. Add rice, bring to the boil again briefly and cook over low heat for about 25 minutes.

    Stir the rice several times. Switch off the cooker, leave the rice to swell on the plate for another 15 minutes. Remove lemon zest from the rice. Fold in yoghurt. Arrange rice and some compote in dessert bowls decorated with lemon balm.

    Add the rest of the compote separately.
