Ribbon noodles with rocket vinaigrette (diabetics)

Ingredients

  • 7-10 Tbsp ingredients
  • 60 g thin ribbon noodles (e.g. tagliatelle)
  • 7-10 Tbsp Salt
  • 1 small clove of garlic
  • 30 g dried tomatoes (from the jar)
  • 1-2 TABLESPOONS Olive oil
  • 1 tablespoon (15 g) Pine nuts
  • 7-10 Tbsp n
  • 5 tablespoons (50 ml) Vegetable broth
  • 1-2 TABLESPOONS Lemon juice
  • 2-3 TABLESPOONS white balsamic vinegar
  • 7-10 Tbsp colourful pepper
  • 50 g cleaned rocket salad

Directions

    Cook the noodles in plenty of boiling salted water for about 8 minutes until al dente

    Peel the garlic and cut into thin slices. Drain tomatoes and cut into small pieces. Heat oil in a pan. Sauté the garlic in it. Add pine nuts and tomatoes and fry briefly. Deglaze with stock, lemon juice and vinegar, bring to the boil. Season with salt and pepper. Wash the rocket and pluck a little smaller if necessary. Drain the noodles. Add the rocket to the vinaigrette, mix everything and arrange on a plate
