Ribbon noodles with peas in mint sauce and salmon

Ingredients

Servings: 4
  • 400 g ribbon noodles
  • 7-10 Tbsp Salt
  • 1 Onion
  • 1 spearmint stem
  • 250 g Salmon fillet
  • 4 TABLESPOONS Olive oil
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp a few squirts of lemon juice
  • 200 g frozen peas
  • 1/8 l dry white wine

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet. In the meantime peel and finely dice the onion. Wash the mint and pluck the leaves. Wash salmon, cut into small pieces. Heat 2 tablespoons of oil in a pan.

    Brown the onion and salmon in it. Season with salt, pepper and lemon juice. Add peas and mint and fry for about 3 minutes. Deglaze with white wine, boil up briefly and season to taste. Heat 2 tablespoons of oil in another pan.

    Swivel the noodles in it and serve with the sauce.
