Clean and wash broccoli and cut into florets. Cook in 1/2 litre boiling salted water for about 8 minutes. Drain broccoli and measure 1/4 litre of vegetable water. Stir cornflour and 3 tablespoons of water until smooth. Bring vegetable water and cream to the boil, thicken with cornflour.
Let simmer for about 2 minutes. Season sauce with salt, pepper stock and half of the lemon juice. Cook pasta in boiling salted water for about 10 minutes. Wash the salmon, dab it dry and cut it into 8 pieces. Sprinkle with remaining lemon juice. Heat oil and butter in a pan. Peel garlic, chop roughly and sauté. Add the salmon and fry on medium heat for about 2 minutes on each side. Season with salt. Drain the noodles.
