Reader's recipe: Plum-yeast cake

Ingredients

  • 75 ml Milk
  • 1/4 cube Yeast
  • 125 g Flour
  • 3 TABLESPOONS Sugar
  • 1 egg (size S)
  • 25 g soft butter
  • 1 kg Plums (or damsons)
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Fat and flour

Directions

    Warm the milk lukewarm and dissolve the yeast in it. Mix flour and 2 tablespoons of sugar in a bowl and press a depression in the middle. Add the yeast milk and mix with some flour from the rim to a thick pre-dough. Cover and let rest for about 15 minutes. Add egg and butter and knead with the dough hooks of the hand mixer to a smooth dough. Cover the dough and leave to rise in a warm place for about 30 minutes. Wash and halve the plums and remove the stone.

    Cut the plum halves in half. Knead the dough again, then roll out on a floured work surface (approx. 25 cm Ø). Line a greased and floured springform pan (24 cm Ø) with the dough, cover and leave to rise for about 15 minutes. Cover it from the outside to the inside with the plums in a fan shape and sprinkle it with 1 tablespoon of sugar. Bake the cake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 25 minutes. Take out and let cool down. Whipped cream tastes good with it
