Raspberries selected. Dissolve coffee in 2 tablespoons of boiling water. Mix quark, cream, sugar, vanilla sugar and mascarpone with the whisk of the hand mixer. Place the lady fingers in a mould.
Drizzle with the liqueur. Spread raspberries, except for some fruits for decoration, on the lady fingers. Spread mascarpone cream on top. Dust with cocoa and serve with the remaining raspberries and, if desired, decorated with lemon balm
