Wash and drain the rocket. Remove the outer leaves from the radicchio. Quarter the radicchio, remove the stalk and cut the salad into strips. Wash and halve the grapes. Roast the nuts in a pan without fat, then chop roughly.
Slice parmesan cheese into very thin slices. Mix salad, grapes, nuts, vinegar and oil. Season salad with salt, pepper and sugar and sprinkle with parmesan shavings just before serving. Wholemeal baguette tastes good with it
