Radicchio-rocket salad with grapes and parmesan

Ingredients

  • 150-200 g Rocket (2-3 bunches)
  • 2-3 (200 g each) Radicchio Salad
  • 200 g blue seedless grapes
  • 50 g Walnut kernel halves
  • 30 g Parmesan cheese
  • 5 TABLESPOONS Cider vinegar
  • 4 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar

Directions

    Wash and drain the rocket. Remove the outer leaves from the radicchio. Quarter the radicchio, remove the stalk and cut the salad into strips. Wash and halve the grapes. Roast the nuts in a pan without fat, then chop roughly.

    Slice parmesan cheese into very thin slices. Mix salad, grapes, nuts, vinegar and oil. Season salad with salt, pepper and sugar and sprinkle with parmesan shavings just before serving. Wholemeal baguette tastes good with it
