Rinse shrimps cold and pat dry. Wash lime hot and rub dry. Wash lemon leaves and dab dry. Cut into corners. Put 2-3 shrimps with lime corners and lemon leaves alternately on skewers.
Season skewers with salt and pepper and fry them in hot oil all around for about 5 minutes. Mix mayonnaise and crème fraîche. Peel and press garlic. Season dip with lemon pepper. Pass the dip to the skewers
