Potatoes with herb quark

Ingredients

Servings: 4
  • 1 kg waxy potatoes
  • 7-10 Tbsp Salt
  • 1/2 bunch Parsley, chervil and dill
  • 1 Garlic clove
  • 1 small onion
  • 250 g Low-fat curd
  • 2 TABLESPOONS Olive oil
  • 7-10 Tbsp juice of 1/2 lemon
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 1/2 Bed of Asian cress mix

Directions

    Peel and wash the potatoes and cook them in boiling salted water for 20-25 minutes. Drain, allow to evaporate

    Meanwhile wash herbs, shake dry. Pluck off leaves or pennants and chop finely, except for a little bit for garnishing. Peel garlic and onion and chop finely. Mix quark, olive oil, lemon juice, herbs, onion and garlic. Season with salt, pepper and sugar. Arrange potatoes with herb quark on plates. Cut cress from the bed. Garnish potatoes with cress and remaining herbs
