Potato salad with salmon

Ingredients

  • 1 kg Potatoes
  • 1 Onion
  • 1 TABLESPOON Sunflower oil
  • 5 TABLESPOONS Wine vinegar
  • 200 ml Vegetable broth
  • 2 TABLESPOONS Sugar
  • 7-10 Tbsp Pepper
  • 5 TABLESPOONS Salad cream
  • 7-10 Tbsp Salt
  • 4 discs (approx. 50 g) smoked salmon
  • 4 Stem(s) Dill
  • 1 TABLESPOON Salmon caviar

Directions

    Wash the potatoes and cook in plenty of boiling water for about 20 minutes. Peel onion and cut into fine cubes. Heat the oil. Fry the onion briefly while stirring until transparent. Deglaze with vinegar and stock.

    Season with sugar and pepper. Drain potatoes, rinse with cold water, drain and peel. Cut potatoes into cubes and marinate in the prepared marinade for about 1 hour. Stir salad cream and 4 tbsp. marinade until smooth. Pour potatoes into a sieve, drain marinade. Mix potatoes and salad cream carefully. Season to taste with salt and pepper. Cut salmon into strips.
