Potato salad with rocket and mustard vinaigrette

Ingredients

Servings: 4
  • 1 kg medium-sized potatoes
  • 1 Onion
  • 75 ml Vegetable broth
  • 5-6 Tbsp White wine vinegar
  • 4 TABLESPOONS Oil
  • 2 TABLESPOONS coarse mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 collar Radishes
  • 1 collar Rocket

Directions

    Wash the potatoes and boil in boiling water for about 25 minutes until soft. Peel and finely dice the onion. Bring stock, vinegar and oil to the boil. Stir in mustard and season with salt and pepper. Drain the potatoes, rinse briefly in cold water, peel and slice. Pour vinaigrette over the potatoes and mix carefully.

    Let potato salad steep for about 30 minutes. Wash, clean and slice the radishes. Wash, clean and drain the rocket. Add radish slices and rocket to the potatoes and mix well. Season salad with salt and pepper and serve lukewarm or cold
