Potato salad with ham and artichokes

Ingredients

  • 750 g Potatoes
  • 1 can(s) (425 ml, 240 g) Artichokes
  • 3-4 Tbsp White wine vinegar
  • 1 package (25 g) frozen salad herbs
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 6 TABLESPOONS Olive oil
  • 3 discs (200 g) cooked ham
  • 1 TEASPOON pink peppercorns
  • some stem(s) Basil

Directions

    Wash potatoes thoroughly and cook in boiling water for about 20 minutes. Then drain, rinse with cold water and remove the skin. Let the potatoes cool down. Drain the artichokes and cut into slices. Mix vinegar, salad herbs, 3 tablespoons water, salt and pepper.

    Whip the oil into the mixture. Cut potatoes into slices. Mix with the artichokes and the marinade. Leave to stand for at least 1 hour. Cut the ham into cubes. Mash the pink pepper. Wash the basil, dab dry and pluck the leaves from the stalks. Mix ham and pink pepper into the salad. Season to taste again if necessary.
