Potato salad with fried sausage

Ingredients

Servings: 4
  • 1 kg waxy potatoes
  • 4 small gherkins + 3 tablespoons cucumber water (glass)
  • 2 TABLESPOONS White wine vinegar
  • 7-10 Tbsp salt, white pepper
  • 4 TABLESPOONS Oil
  • 1 collar Spring onions
  • 2-3 Tomatoes
  • 4 Fried sausages (à approx. 100 g)

Directions

    Wash the potatoes and cook covered for about 20 minutes. Drain, peel and let cool down a little

    Mix cucumber water, vinegar, salt and pepper. Beat 3 tablespoons of oil into it

    Leek onions clean, wash and in fine Rin-ge cut. Wash tomatoes and cut into large cubes. Cut cucumbers and potatoes into slices. Mix everything with the marinade and let it stand for at least 3/4 hour.

    Heat 1 tablespoon of oil in a large frying pan. Fry the sausages for about 8 minutes until golden brown all around. Season potato salad to taste. Serve with sausages

    If you make the potato salad the day before or in the morning, it will go well. But then season it once more, because potatoes absorb a lot of spice and liquid. Ideal for seasoning and lengthening is dissolved broth
