Potato pan with bacon and endive salad

Ingredients

Servings: 4
  • 1 kg small, new potatoes
  • 4 Shallots
  • 2 Garlic cloves
  • 200 g Endive salad
  • 4 Stem(s) Oregano
  • 125 g streaky smoked bacon
  • 2-3 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 200 g Schmand

Directions

    Wash potatoes thoroughly and cook in water for 15-20 minutes. Meanwhile peel the shallots and garlic. Cut shallots into slices. Finely dice garlic. Wash salad, shake dry and cut into strips.

    Wash the oregano, dab dry and remove the leaves. Dice the bacon. Drain the potatoes, rinse with cold water and cut in half lengthwise. Heat oil in a large pan. Fry the bacon cubes in it until crispy, take them out.

    Fry the potatoes in bacon fat for 6-8 minutes, turning them over. After about half of the frying time add shallots. 2-3 minutes before the end of the frying time mix in garlic, bacon, oregano and salad. Season with salt and pepper.

    Add some sour cream.
