Potato cookies with ham and apple

Ingredients

Servings: 6
  • 1 large apple (approx. 250 g)
  • 100 g clarified butter
  • 75 g Schinkennuggetz
  • 100 g Panko (alternatively breadcrumbs)
  • 1 package (750 g) ready dumpling dough "Franconian half & half" (refrigerated shelf)
  • 7-10 Tbsp Flour

Directions

    Peel and quarter the apple and cut out the core. Cut apple into fine cubes. Heat 10 g clarified butter in a frying pan, fry the ham and apple cubes for about 4 minutes while turning. Place in a bowl and let cool off

    Put Panko on a large plate. Set aside about 2 tbsp. of the apple and ham mixture. Add the dumpling dough to the remaining apple-ham-mixture and knead briefly. Form the dumpling dough on a floured work surface to a roll of approx. 5 cm thickness

    Cut the potato roll into 20 slices about 1 1/2 cm thick, turn them into pancakes and put them on a plate. Heat the remaining clarified butter in portions in a large pan and fry the potato cookies until crispy brown, turning them over. Keep the finished potato cookies warm. Arrange the potato biscuits on a plate and sprinkle with the remaining apple and ham mixture
