Potato and tomato skewers

Ingredients

Servings: 12
  • 6 small, waxy potatoes (Grenailles variety)
  • 2 TABLESPOONS Pine nuts
  • 2 stem(s) Basil
  • 6 cherry tomatoes
  • 2 TABLESPOONS Basil pesto
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Wash the potatoes and cook them in boiling water for about 20 minutes. Drain, rinse briefly in cold water and peel. Cut potatoes in half.

    Roast the pine nuts in a pan without fat, take them out. Wash the basil, shake dry and remove the leaves. Wash tomatoes, cut off ends. Cut the tomatoes in half.

    Put potato halves on skewers and season with salt and pepper. Add 1 tomato slice, some pesto and pine nuts. Garnish with small basil leaves and serve cold.
