Pork medallions wrapped in bacon

Ingredients

Servings: 4
  • 8 Pork medallions (approx. 50 g each)
  • 8 discs Bacon
  • 750 g medium-sized potatoes
  • 6 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 medium zucchini
  • 4 Tomatoes
  • 100 ml dry white wine
  • 100 g Whipped cream
  • 2-3 TABLESPOONS sauce thickener
  • 20 g green pepper
  • 7-10 Tbsp colourful pepper
  • 7-10 Tbsp wooden skewers

Directions

    Wash the meat, dab dry, wrap with bacon and stick together with wooden skewers. Peel and wash potatoes and cut into slices. Heat 2 tablespoons of oil in a frying pan and fry the potatoes in it at low heat for about 15 minutes while turning.

    Season with salt and pepper. In the meantime, clean and wash the zucchini and tomatoes. Cut the zucchini into thin slices and the tomatoes into slices. Remove potatoes from the pan and keep warm. Heat 2 tablespoons of oil in a saucepan, fry the zucchini for 5 minutes.

    Fold in tomatoes and season with salt and pepper. Heat the remaining oil in the pan. Fry the meat on both sides for about 3 minutes. Keep meat warm. Deglaze the frying stock with wine and cream, bring to the boil briefly.

    Stir in the sauce thickener and bring to the boil again briefly. Season with salt and pepper. Stir in green pepper. Arrange meat, vegetables and potatoes on a plate. Sprinkle the meat with some coloured pepper.

    Add extra sauce.
