Ingredients

  • 2 kg loin of pork (let the butcher add the bone)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 3 TABLESPOONS Flour
  • 250 g + 1-2 teaspoons sugar
  • 8 TABLESPOONS Apple vinegar
  • 7-10 Tbsp ground cinnamon
  • 6 sour apples
  • 2 TABLESPOONS Lemon juice
  • 100 g Whipped cream
  • 7-10 Tbsp Parsley

Directions

    Wash meat and bones, dab dry. Lightly scratch the surface of the roast. Rub with salt, pepper and flour. Roast on the bone in the fat pan in the preheated oven (electric range: 225 ° C/ gas: level 4) for approx. 15 minutes. Simmer 250 g sugar, vinegar and 1/2 teaspoon cinnamon for about 5 minutes.

    Pour 1/2 litre of water for frying. Drizzle the roast with some sugar solution. With electric cooker: 175 °C/ gas: stage 2 fry for approx. 2 1/4 hours. Every 20 minutes add some solution to the roast, wash apples, quarter them and remove seeds. Peel as desired and sprinkle with lemon juice. 30 minutes before the end of the cooking time, place on the fat pan and sprinkle with 1-2 teaspoons of sugar. Add to the cooking time, turning occasionally. Add some water if necessary. Put the roast and apples on a plate and keep warm. Remove bones from the fat pan. Dissolve the roast with cream, put it in a pot and bring it to the boil.
